hey folks..
how is the diet going?
*thumbs up for Mocha*
Havent been doing so well, but I hope today makes a difference..
I have a great recipe here..
NOt sure if there is sphagetti squash in Trinidad..
but you can do the same with Eggplant and some other veggies I guess, like onion and green peppers and stuff...
Boil Squash with Butter, herbs and salt.. use your discretion..
WHen it is cooked..
Place in buttered baking dish..
cover with cheese and bake for 15 minutes..
Be sure that it isnt too wet.. because it tends to spring water, so in the boiling stage you are more or less steaming it with seasonings..
It tastes really good..

You can do the same with Eggplant.
Eggplant Casserole
1lb Eggplant
1 1/2 cup cheese
1 tin of cream (not evaporated milk but CREAM)
Salt
Black pepper
Fresh Garlic
Onions finely chopped
Green peppers
Tomatoes
Maggi Tastemaker
Red Chilli Peppers

Mix Cream with Garlic and herbs..
Beat till creamy, add a tbsp of water while beating
Chop all vegetables fine , add parmesan or cheddar cheeses
place in greased baking dish or bowl, whatever makes mixing easier
Combine Cream and vegetables.. season well
Bake at 350 F
This dish will be a bit watery if not baked for a very long time
Continue adding cheese to the top..
Leave to dry out a bit..
Serve with any meat dish..

My journal so far has just been really boring, sorry about that..
often times when I post I am in a rush and I figure it's good to keep some kinda file
Neway, I have lost 10 lbs so far on Atkins *takes a bow*
I dont really feel it though, that's just what the scale says
so hopefully by Feb 9th, my next pleasure day.. or treat day, I will be weighing a lot less
I am going to be posting some do-able recipes so that people dont get frustrated

HEre is a great dessert esp. for you Mocha cos you look like you like yuh sugar, lol
It's a low Carb COCONUT LAYER CAKE
Ingredients needed-
CAKE MIX:
8 Eggs
3/4 Cup sugar substitute (splenda)
1 tbsp Coconut Extract (dunno how feasible this is in Trinidad, but I am sure you can find it, try making a substitution and see how that works)
2/3 cup Atkins Bake Mix
1/2 cup unsalted butter, melted and cooled
FROSTING:
6 egg whites
3/4 cup sugar substitute
1/4 teaspoon salt
1 1/2 cups unsalted butter, softened
2/3 cup unsweetened shredded cocount
NOw hot up yuh oven.. lol heat oven to 350 F
Grease two 8-inch cake pans, line bottoms with grease proof/parchment paper and grease again.
With mix on high, beat eggs (8 eggs), sugar substitute, and extract until ribbons form, about 5 mins.
In three additions, sift bake mix over egg mixture; fold in with rubber spatula to combine. Fold in butter. Pour batter into prepared pans.
Bake 22 mins until cake springs back in the middle when lightly touched. Cool in pans on wire racks 5 mins. Line racks with paper towels and invert cake layers. Gently peel off parchment. Cool completely.

FROSTING:
In a double boiler or a bowl placed over simmerin water, whisk egg whites, sugar sustitute andsalt until temperature reaches 130 F. Transfer whites to mixing bowl and beat on high speed until cool. Reduce speed to medium and beat in butter until well combined.
Place one cake layer on serving plate. Mix 1 cup of frosting with half the coconut; forst bottom later. Place top cake layer over bottom laye. Cover top and sides with remaining frosting. Pat remaining cocount over frosting.

Eggs and Bacon w/ Tomatoes and Parsley

Chicken Breasts w/ Garlic and Herbs
Broccoli
It's a great recipe..
Chicken Breasts, seasoned with Chives, cilantro, ginger, garlic, onions, pepper
Browning
Tbsp oil, finely chopped garlic (2 tbsp)
Italian seasoning
Parsley
Basil
Thyme
Leave to cook, putting about a 1/4 cup of water to prevent the pot from getting too dry.. and burning the chicken
Add salt and pepper to taste..
Maggi tastemakers are a nice addition..
Add Mushrooms too.. gives it a nice flavor
When the chicken is done, remove from fire and add Parmesan cheese liberally..
gives it a great taste

Dinner
Jerk Pork
and Of course.. Broccoli

My body feels okay so far.. I dont feel deprived..
It's just always on my mind what I can and cannot have..
and if I am not sure, I just DONT have it..

Drank about 7 bottles of water today.. I am very proud of myself..
I am hoping I can get thru the weekend without the alcohol..

I've been fighting a losing battle with weight loss for yeaaarrs! It's become tiring and I figure if this cant work, nothing else can.
I've done everything.. the pills, the drinks, the starvation and nothing has worked..
Heard a lot of great things about the Atkins diet from people who've been able to keep it off for years..
and I am so inspired..
Tomorrow marks the beginning of a new me.. or at least so I hope
A few friends and I are going to be beginning the Atkins as of Jan 12th 2004..
With God's help a little motivation and a lot self control, I think we can do it..

Today I am going to the food store to get my ingredients..hoping to have at least a little bit of variety..
the one thing I am glad about, is that I cant eat fruits.. I dont like them very much
and I think I can live without the sugar for a while too.. *waves goodbye to blueberry muffin and cheesecake*
There are 14 days of induction.. and I know if I get through this I can get through the rest of the days..

Later on, I will be posting lil snippets on the diet and stuff.. but I cant quote, cos I dont want anyone sueing (sp?) me for their stuff..
well folks.. wish me well..
I'm going to try to get my friend to put a lil shout box in here so that those of you who want to go on the diet with us or want to share comments and words of encouragement can go right ahead..
